Constituents of a cationic peptide-rich fraction of Lentinus edodes.

Abstract

A new y-glutamylpeptide, y-glutamylnicotianine was isolated from a cationic peptide-rich fraction of Lentinus edodes, and the structure was confirmed by enzymatic synthesis. The presence of lactam of saccharopine and y-glutamylglutamic acid was demonstrated in the fraction.
